I love going to the farmers market this time of year. The bounty of vegetables and fruit makes it so easy to eat healthy. Kale is one the staples I almost always buy. I love eating it in salads or sauteed with other veggies.
This simple kale salad (chopped lacinato kale drizzled with olive oil and balsamic vinegar) is made even better with flake salt and seeds. The stars in my little handmade copper and glass bowls this time are Maldon smoked sea salt and pepitas.
I’ve spiced up other kale salads with lemon pepper, various nuts or beans, and crispy garlic. Fresh squeezed lemon and cumin are also fantastic additions.
